I love when I can quickly put together simple ingredients to create a warm and tasty treat just for myself. Many find it easier to stick to their goals with a quick, single-serving dessert because it removes the temptation to overeat. It also means your dessert will always be fresh, warm, and moist when you’re ready for it. And then there’s the added bonus of no food waste! We could go on and on. 

Low-Carb Desserts

This dessert has been given a low-carb stamp of approval, thanks to ingredient swaps like almond flour (instead of regular wheat flour), and stevia for sugar. Choosing low-carb desserts can be useful for those with diabetes, or people following keto or low carb diets. Having some sweeter options can be hard to come by if you are trying to keep your carbs down. That said, each of our mug cakes contain only 6 grams of carbohydrates, making this dessert low-carb (and even keto approved, if you plan ahead!)

Nut Butter

Add nut butter for creamy textures and nutty flavors. You can use any nut butter, such as peanut, almond, or even sun butter if you have allergies! We suggest swirling about one-half to one full tablespoon of nut butter into the batter before cooking, and then drizzling one to two teaspoons on top after cooking for extra creamy goodness!

Cocoa Powder

For an easy, chocolate mug cake, mix two teaspoons of cocoa powder into the batter before cooking. Then, you’re ready to go! You can also add some chocolate chips (more below) for even more chocolatey flavors.

Chocolate Chip

You can add chocolate chips as is or add them with nut butter or cocoa powder for a delicious mixture of flavors. We suggest going for sugar-free chocolate chips to keep the carb count of this recipe low.

Sprinkles

Mix in some rainbow sprinkles for a celebratory birthday cake look. Personally, I love putting sprinkles on most of my sweets because it makes my desserts look so pretty and fun to eat! You can even top this birthday mug cake with a dollop of whipped cream (or vanilla ice cream) to finish off the look.

This delectable dessert is so stinkin’ easy to prepare! Simply add all the ingredients (except for the add-ins) into a microwave safe mug and stir until well-combined. Then, gently mix in your choice of add-ins. Microwave your mug cake on high for 45 to 60 seconds, until the cake has risen and has a few air bubbles. Keep an eye on it to make sure it doesn’t overflow. Once it’s ready, grab your spoon and dig in!

Ingredients

  • 1 1/2 tablespoons butter melted, but not hot
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • 3 tablespoons almond flour super-fine
  • 2 tablespoons stevia
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon kosher salt

Add-Ins

  • peanut butter
  • cocoa powder
  • sugar-free chocolate chips
  • rainbow sprinkles
  • whipped cream

Instructions

  • Add all ingredients (except for the add-ins) into a microwave-safe mug and stir until well-combined. Gently mix in your choice of add-ins.
  • Microwave on high for 45 to 60 seconds, until the cake has risen.
